Chocolate macadamia fudge

Ingredients

  • 1 cup of hulled tahini
  • 1 cup of macadamia butter
  • 1 1/2 Tbsp of raw cacao powder
  • 1/2 cup of maple syrup
  • 3 Tbsp coconut oil, melted
  • 3 tsp rosewater
  • 2 tsp vanilla extract
  • 1/2 cup of macadamia chips or whole nuts, drizzled with maple syrup and a tiny bit of sea salt for topping

Method

1. Line a small tray with baking paper

2. Place all the ingredients (except the macadamia chips and sea salt) in a bowl and mix together well. Spoon into the tray, smooth the top

3. Topping: Place the macadamia chips/nuts on another baking paper lined tray, drizzle with maple syrup and a pinch of salt. Roast in a moderate oven for 5-10 minutes or until starting to show a golden colour

4. Smooth the top of the mixture and sprinkle over roasted macas. Place in the freezer for 4 hours or overnight

5. Cut the fudge into bite-sized squares and serve as soon as you take them out of the freezer. They melt quickly!
